The people who forage for mushrooms have been trained by those who searched before them and know the appropriate times to safely harvest Porcini.
\nThis peculiar activity yields a typical recipe. Delicious, homemade pasta with Porcini mushrooms.<\/p>\n

Tagliatelle with Porcini mushrooms<\/strong><\/p>\n

Four Servings<\/p>\n\n\n\n\n\n\n\n\n\n
Ingredients<\/td>\nAmount<\/td>\n<\/tr>\n
Flour<\/td>\n500 g.<\/td>\n<\/tr>\n
Eggs<\/td>\n2<\/td>\n<\/tr>\n
Extra virgin olive oil<\/td>\n10 milliliters<\/td>\n<\/tr>\n
Peeled tomatoes<\/td>\n300 g.<\/td>\n<\/tr>\n
Porcini mushrooms<\/td>\n500 g.<\/td>\n<\/tr>\n
Garlic, parsley, sale, water<\/td>\nAs needed<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n

Prepare<\/strong> the pasta<\/strong>: Put the flour on a big board or in a large bowl.\u00a0 Make a well in the center and add the eggs.\u00a0 Mix with your hands and knead until smooth.\u00a0 If it is too dry add a bit of water.\u00a0 Let the dough rest for a while.<\/p>\n

Roll the dough into a thin sheet.\u00a0 Then cut the dough into long, wide strips.\u00a0 Put it aside.<\/p>\n

Cook the pasta in boiling water.<\/p>\n

Prepare the sauce:<\/strong>\u00a0 Add olive oil to a pan.\u00a0 When the oil is hot, add some wedges of garlic and the peeled tomatoes.\u00a0 Let that cook for a few minutes.\u00a0 Add fresh mushrooms.\u00a0 (If you are using sun dried mushrooms, reconstitute them first with water.)\u00a0\u00a0 Add a bit of salt.\u00a0 When the mushrooms are almost cooked, add finely chopped fresh parsley. Toss the pasta with the sauce.<\/p>\n

Serve with Falanghina or Aglianico del Sannio wine.<\/p>\n
